How often should I switch my rat's food?

I have the ever-so-snazzy Kaytee Forti-Diet blocks. On the bag, it says to get rid of the uneaten food before I put new stuff in, ok.
The food has only been in there since about 8pm yesterday.

Same boat, I find my rats to be very wasteful and I'm always throwing out what looks to be perfectly good food. But because of their high metabolisms rats must always have something to nibble on 24/7. You will need to experiment to see how much each of your girls are eating, to make sure they are getting enough and not just wasting it.

I will leave lab blocks in the cage for 3 days and remove any of them that have gotten wet, or have been peed or pooped on every day, and remove all every 3 days because that's when I do a complete cage cleaning.

My rats get their supper of fresh foods at night and I remove anything that has been uneaten the next morning, which is practically never.

Rats THRIVE on a huge variety of food. Lab blocks can get boring and some rats just stash them in a corner.

One mentioned here is cat food. Cat food is a forbidden food for rats because rats do not have gall bladders. The gall bladder is the organ that stores enzymes that help to break down fat. Without this organ the rat's liver has to work overtime to produce enough of the enzyme to digest the overabundant fat and protein in cat food. This can lead to liver disease, kidney disease, heart disease, or obesity in rats.
